Diet Pizza That Tastes Good? Really!!

The Background

I have been on Weight Watchers for 7 weeks and I love pizza. It is my #1 trigger food. So, I have not eaten “real” pizza for 7 weeks now.  I needed pizza  fix and necessity being the mother of invention, I had to get creative.

I made a variation on a recipe that I found on the Flat Out Bread Site. I used a little “Sandra Lee Semi-Homemade” treatment on this quick Friday night dinner for me and my 7 year old son.

The Flat Out Pepperoni Pizza Recipe

Ingredients:

  • 1 Flat Out Light Flatbread
  • 1/4 cup Pizza Sauce – I used Ragu Pizza Quick but any will do
  • 1/3 cup Kraft Italian Five Cheese Natural Shredded Cheese
  • 9 slices Hormel Turkey Pepperoni
  • 2 tsp Italian Seasoning
  • dash of Parmesan Cheese
  • Ingredients

    Instructions:

    Bake Flat Out Light Flatbread on a cookie sheet sprayed with cooking spray for 7 minutes at 350 degrees.  Before putting in the oven, I sprinkled  1 tsp of Italian Seasoning on the bread.

    Pull from oven add 1/4 cup pizza sauce and spread on flatbread. Lightly sprinkle with Parmesan cheese. Add 1/3 cup Kraft Italian Five Cheese Natural Shredded Cheese. Sprinkle remaining teaspoon of Italian Seasoning over shredded cheese. Place turkey pepperoni on top of cheese and place back in oven for 10 to 12 minutes until cheese is melted and bubbly.

    Total Weight Watchers Points: 4 for the WHOLE pizza! Don’t ask me calories. I only work on Weight Watchers points. :)

    I’m gonna try this, it sounds yummy! I’m really surprised that you didn’t use goat cheese . . .

    That’s in my next post, Michelle. :) Just kidding. I’m sure I will have a goat cheese recipe in here eventually though. If nothing else, just for you!
