5 Rules of Care for Expensive Non-Stick Cookware

After years of using “hand me down” pots and pans and the occasional $15 discount store skillet, I splurged and bought a 12″ Calphalon Skillet from the Aspire Collection. It is the top of the line Calphalon at Target. So I paid $40.00 instead of $140. :) Even though I love to cook and bake, I just started buying good cookware.  It has the heavy–gauge hard anodized aluminum exterior and a non-stick interior and it has a nice glass lid . It weighs a TON! Not literally, of course, but if you have RA, it might as well. It’s also the best pan I have ever had.

Since this was my first “good” pan I wanted to take care of it. So here are my “rules” for the pan. My 8 year old son says it’s Mom’s pan LAW! I like that.

Rule #1

Before cooking with the a non-stick pan, you still have to season it.

I wish I could remember who told me this tip. But if you just wipe the pan down before cooking with oil you will save the life of the non-stick surface.

Rule #2

NEVER turn the heat up past medium high.

I never turn it up above medium myself. Non-stick coatings are not made for high heat. Plus, if you have a good conductor like anodized aluminum or copper the heat will transfer through the pan well and you don’t need to blast it with heat.

Rule #3

NEVER put it in the dishwasher.

Dishwasher detergent is too corrosive since most of them contain bleach. This will kill the non-stick coating.

Rule #4

Wash out the pan immediately after use.

If you wait to wash out cheese or eggs or something else sticky, you will have to scrub even a non-stick to get it off. You want to reduce scratching on the non-stick coating.

Rule #5

Match the temperature of the water as closely as possible to the temperature of the pan.

This is to prevent warping. You always want your skillet to hit the heat source evenly and if you douse a hot pan with ice cold water it will warp it over time.
