This is NOT one of my from scratch recipes. So, if you need a quick dinner for this is quick, easy and tasty.
Philadelphia Cream Cheese Cooking Creme – A Short Review
First, I wanted to try those new Philadelphia Cream Cheese Cooking Cremes. I got the Santa Fe Flavor because my family loves Mexican cuisine. The Santa Fe flavor tastes like Taco Bell Baja Sauce if you like that. I do, so I thought it was fabulous. It has a whipped texture and was very easy to add to the skillet straight from the fridge. One container will make two of this recipe. The container has a recipe for easy chicken fajitas on it, but I put my own personal spin on it with already prepared foods to speed it up even more. It is not pure dairy as the label might imply, so if you are a stickler about filler and preservatives, check the label. Yes, it was processed food. Shoot me, I was hungry and it was delicious.
Easy Chicken Fajitas

Ingredients
1 package fully cooked grilled chicken strips
1 package pico de gallo (my grocery store sells it in the produce section)
½ yellow onion, diced
1 teaspoon extra-virgin olive oil
½ container Philadelphia Cream Cheese Cooking Creme Santa Fe Blend
8 flour tortillas, small
Directions
Put 1 teaspoon of olive oil in a skillet on medium heat. Add the onion and the pico de gallo to the skillet and saute until the onion is somewhat soft, about 2 to 3 minutes. Add the chicken and the Cooking Creme. Saute for 2 to 3 more minutes. Warm tortillas in plastic wrap in the microwave for 15-20 seconds. Fill the tortillas with the chicken mixture. Makes 8 servings.
Serving suggestions: You can add cheese to the top, but I thought that was overkill. Serve with a side of Spanish rice.
